Ingredients
4 salmon fillets (6 oz each), skin removed
1/2 cup cornstarch
1 tsp garlic powder
1/2 tsp paprika
Salt and black pepper to taste
3 tbsp avocado oil
1/2 cup mayonnaise
3 tbsp sweet chili sauce
1 tbsp sriracha
1 tsp lime juice
Instructions
In a medium bowl, whisk together the mayonnaise, sweet chili sauce, sriracha, and lime juice until smooth and set aside.
Pat the salmon dry with paper towels and cut into 1-inch cubes.
In a separate bowl, toss the salmon cubes with cornstarch, garlic powder, paprika, salt, and pepper until evenly coated.
Heat the oil in a large skillet over medium-high heat.
Add the salmon cubes in a single layer and fry for 3–4 minutes per side until golden brown and crispy.
Remove the skillet from the heat, drizzle with half the sauce, toss gently, and serve with the remaining sauce on the side.
Notes
Storage: Keep leftovers in an airtight container in the fridge for up to 2 days; reheat in an air fryer to maintain crunch.
Substitutions: You can use firm white fish like cod or mahi-mahi instead of salmon.
Pro Tip: Ensure the salmon is very dry before applying the cornstarch to achieve the signature crispy texture.
