Ingredients
2 lbs fresh chicken wings, split into flats and drumettes
1 tbsp baking powder (aluminum-free)
1 tsp kosher salt
1/2 tsp garlic powder
1/2 tsp black pepper
1/2 tsp smoked paprika
1/2 cup buffalo sauce (non-alcoholic)
Instructions
Preheat your oven to 425°F (220°C).
Pat the chicken wings extremely dry using paper towels to ensure maximum crispiness.
In a large mixing bowl, toss the dry wings with baking powder, salt, garlic powder, black pepper, and smoked paprika until evenly coated.
Line a rimmed baking sheet with foil and place a wire cooling rack on top.
Arrange the wings in a single layer on the rack, ensuring they do not touch.
Bake for 40-45 minutes, flipping the wings halfway through for even browning.
Remove from the oven and toss the hot wings in a clean bowl with your chosen buffalo sauce before serving.
Notes
Store leftovers in an airtight container for up to 3 days. Reheat in an oven or air fryer to restore crunch. Do not substitute baking powder with baking soda. Ensure the wings are bone-dry before seasoning for the best texture.
