Ready in just thirty minutes, it is sure to become a new family favorite.

Ingredients

Scale

1.5 lbs boneless, skinless chicken breasts, pounded thin
2 tbsp olive oil
1/2 cup sun-dried tomatoes (packed in oil), chopped
3 cloves garlic, minced
2 cups fresh baby spinach
1 cup heavy cream
1/2 cup chicken broth
1/2 cup grated parmesan cheese
1 tsp dried oregano
1/2 tsp smoked turkey bacon bits
Salt and black pepper to taste

Instructions

Season the chicken breasts with salt, pepper, and dried oregano.
Heat olive oil in a large skillet over medium-high heat.
Add chicken and cook for 5-6 minutes per side until golden brown and cooked through; remove and set aside.
In the same skillet, add the sun-dried tomatoes and minced garlic, sautéing for 1 minute until fragrant.
Pour in the chicken broth and heavy cream, bringing the mixture to a gentle simmer.
Whisk in the parmesan cheese until the sauce becomes thick and glossy.
Stir in the baby spinach and let it wilt for about 2 minutes.
Add the crispy smoked turkey bacon bits to the sauce.
Return the cooked chicken to the pan and coat thoroughly with the sauce before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stove with a splash of chicken broth to loosen the sauce if it thickens too much. Serve over pasta, rice, or with a side of crusty bread for a complete meal.
