Description

This Creamy Roasted Apple Pumpkin Soup is the ultimate fall comfort food, blending earthy roasted pumpkin with tart Granny Smith apples for a complex, velvety flavor. It is a nutritious, elegant dish that comes together in under an hour, making it perfect for both festive holiday dinners and cozy weeknight meals. The addition of creamy coconut milk ensures a silky texture that is entirely dairy-free, while a topping of crispy turkey bacon adds a delightful savory crunch. Simple to prepare and easy to love, this seasonal staple is sure to become a family favorite.

Ingredients

Scale

1 medium sugar pumpkin, peeled, seeded, and cubed
2 Granny Smith apples, peeled, cored, and chopped
1 large yellow onion, diced
4 cups vegetable broth
1 cup full-fat coconut milk
1 tbsp olive oil
1 tsp ground cinnamon
1/2 tsp ground nutmeg
Salt and black pepper to taste
Crispy turkey bacon bits for garnish (optional)

Instructions

Preheat your oven to 400°F (200°C).
Toss the cubed pumpkin, apples, and onion with olive oil on a baking sheet and roast for 25 minutes until tender and caramelized.
Transfer the roasted vegetables and fruit into a large soup pot.
Add the vegetable broth, cinnamon, and nutmeg to the pot.
Bring the mixture to a gentle boil, then reduce the heat and simmer for 10 minutes.
Remove from heat and use an immersion blender to process until the soup is smooth and glossy.
Stir in the coconut milk, season with salt and pepper to taste, and serve hot with crispy turkey bacon bits if desired.

Notes

Store leftovers in an airtight container in the refrigerator for up to 4 days or freeze for up to 3 months. For a different texture, heavy cream or Greek yogurt can be substituted for coconut milk. To adjust the thickness, add an extra cup of vegetable broth until the desired consistency is reached.
