Ingredients
1 lb pasta (penne or fettuccine)
1/2 lb ground chicken sausage, casings removed
1 cup pumpkin puree (not pie filling)
1/2 cup heavy cream
3 cloves garlic, minced
1/2 teaspoon ground sage
1/4 teaspoon nutmeg
1/4 cup grated Parmesan cheese
Salt and pepper to taste
Instructions
Bring a large pot of salted water to a boil and cook pasta according to package directions until al dente.
In a large skillet, brown the ground chicken sausage over medium heat, breaking it into small pieces for 5-6 minutes.
Add minced garlic to the skillet and sauté for 1 minute until fragrant.
Lower the heat and stir in the pumpkin puree, heavy cream, sage, and nutmeg until smooth and simmering.
Add the Parmesan cheese and stir until the sauce is slightly thick and glossy.
Drain the pasta and toss directly into the skillet with the sauce until thoroughly coated, then serve immediately.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days. Reheat gently on the stove with a splash of milk if the sauce thickens too much. For extra protein, ground beef can be substituted for the chicken sausage.
