Ingredients
8 lasagna noodles, cooked al dente
1 cup pumpkin puree (pure pumpkin, not pie mix)
15 oz ricotta cheese
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
1/2 tsp nutmeg
1 cup finely diced smoked beef
2 cups creamy Alfredo sauce
Fresh sage for garnish
Instructions
Preheat your oven to 375°F (190°C).
Boil lasagna noodles until al dente and lay flat on parchment paper.
In a large bowl, combine ricotta, pumpkin puree, half of the parmesan, nutmeg, and diced smoked beef.
Spread 2-3 tablespoons of the pumpkin mixture onto each noodle and roll up tightly.
Pour half of the Alfredo sauce into a 9×13 baking dish.
Place rolls seam-side down in the dish.
Top with remaining sauce, mozzarella, and parmesan.
Bake for 25 minutes until bubbly and golden.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the oven to maintain texture. If preferred, smoked chicken breast is an excellent alternative to smoked beef.
