Ingredients
2 cups butternut squash, peeled and cubed
1 cup orzo pasta
3 cups fresh baby spinach
2 tablespoons olive oil
3 cloves garlic, minced
1/2 cup heavy cream
1/2 cup grated parmesan cheese
2 cups vegetable broth
1/2 teaspoon smoked chicken strips, diced
Salt, pepper, and nutmeg to taste
Instructions
Preheat your oven to 400°F (200°C).
Toss cubed squash with olive oil, salt, and pepper on a baking sheet and roast for 20 minutes until tender and golden brown.
Heat a drizzle of oil in a large skillet, add diced smoked chicken strips and garlic, and sauté for 2 minutes.
Add the orzo to the skillet, stirring for 1 minute to toast.
Gradually pour in the vegetable broth and stir frequently until liquid is absorbed and orzo is al dente.
Fold in the heavy cream, parmesan, and roasted squash.
Stir in the spinach until just wilted.
Season with a pinch of nutmeg and pepper before serving.
Notes
Store leftovers in an airtight container for up to 3 days and add a splash of broth when reheating to restore creaminess. For a vegetarian version, swap the smoked chicken strips for pan-seared chickpeas.
