Ingredients
4 boneless chicken breasts (6 ounces each)
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon Italian seasoning
1/2 teaspoon paprika
2 tablespoons olive oil
2 tablespoons unsalted butter
6 garlic cloves, finely minced
1 cup low-sodium chicken broth
1 cup heavy cream
1/2 cup freshly grated Parmesan cheese
1 teaspoon Dijon mustard
1 tablespoon fresh lemon juice
1 tablespoon chopped fresh parsley
Optional: 1/4 teaspoon crushed red pepper flakes
Instructions
Pat chicken breasts dry. Slice thick breasts horizontally into two thinner cutlets
Season both sides with 3/4 tsp salt, black pepper, Italian seasoning, and paprika
Heat olive oil in a skillet over medium-high. Cook chicken 5-6 mins per side until golden brown and internal temperature reaches 165°F
Reduce heat to medium. Melt butter in the same skillet, add garlic and cook 30-45 seconds until fragrant
Pour in chicken broth, heavy cream, and remaining 1/4 tsp salt. Stir in Parmesan and Dijon mustard until sauce thickens slightly, 3-4 mins
Return chicken to skillet to soak up sauce for 2-3 mins. Finish with lemon juice and parsley
Notes
Use a meat thermometer for precise doneness
Optional red pepper flakes add mild heat if desired
Chicken thighs work well as a bone-in alternative
Add steamed green beans or carrots for a complete meal
