4 salmon fillets (about 6 oz each)
2 tablespoons olive oil
3 tablespoons butter
4 cloves garlic, minced
1/2 cup chicken broth
1 cup heavy cream
1/2 cup sun-dried tomatoes, chopped
2 cups fresh baby spinach
1/2 cup grated Parmesan cheese
1 teaspoon dried oregano
Salt and cracked black pepper to taste
2 slices crispy chopped turkey bacon (optional, for garnish)


Instructions

Pat the salmon dry with paper towels and season with salt and pepper.
Heat olive oil in a large skillet over medium-high heat.
Place salmon skin-side up and sear for 4-5 minutes until golden.
Flip and cook for another 3 minutes until cooked through, then remove and set aside.
In the same pan, melt the butter and sauté minced garlic for 1 minute.
Pour in chicken broth to deglaze the pan and stir in sun-dried tomatoes; simmer for 2 minutes.
Reduce heat to low, stir in heavy cream and Parmesan cheese, and simmer until thick and glossy.
Add fresh spinach and cook until just wilted, about 1-2 minutes.
Place salmon back into the skillet and spoon the sauce over the fillets to serve.

Notes

Store leftovers in an airtight container in the refrigerator for up to 2 days. Reheat gently on the stovetop or in the microwave. Use high-quality chicken broth as a substitute for white wine to keep the dish non-alcoholic.
