1 lb fettuccine or penne pasta
2 large chicken breasts, sliced into strips
2 tbsp olive oil
3 cloves garlic, minced
2 cups heavy cream
1 cup freshly grated Parmesan cheese
1/2 tsp salt
1/2 tsp black pepper
1/4 tsp ground nutmeg (optional)
Fresh parsley for garnish


Instructions

Bring a large pot of salted water to a boil and cook pasta according to package directions until al dente; drain and set aside.
Heat olive oil in a large skillet over medium-high heat.
Add chicken strips, season with salt and pepper, and cook for 5-6 minutes until golden brown and cooked through; remove from skillet and set aside.
In the same skillet, add the minced garlic and sauté for 1 minute until fragrant.
Pour in the heavy cream and simmer for 3 minutes.
Stir in the Parmesan cheese until the sauce is smooth and slightly thickened.
Add the cooked chicken back into the skillet.
Add the cooked pasta to the skillet and toss gently until every strand is coated in the creamy sauce.
Garnish with fresh parsley and serve immediately.

Notes

Keep leftovers in an airtight container in the fridge for up to 3 days. Reheat with a splash of milk to restore creaminess. If you prefer a lighter sauce, you can substitute half of the heavy cream with whole milk or half-and-half.
