Ingredients
1.5 lbs chicken breasts, cut into bite-sized pieces
8 oz cremini mushrooms, sliced
1 package (5.2 oz) Garlic & Herb Boursin cheese
1/2 cup low-sodium chicken broth
2 tablespoons olive oil
1 teaspoon dried thyme
Salt and black pepper to taste
Fresh parsley for garnish
Instructions
Heat olive oil in a large non-stick skillet over medium-high heat.
Season chicken with salt and pepper, then sear for 5-6 minutes until golden and cooked through; remove and set aside.
In the same skillet, add the mushrooms and sauté for 5 minutes until soft.
Pour in the chicken broth, deglazing the pan by scraping up browned bits.
Lower the heat, add the Boursin cheese, and stir until the sauce is smooth and glossy.
Add the chicken back into the skillet and toss to coat.
Simmer for 2 minutes to meld the flavors.
Sprinkle with fresh parsley and serve warm.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days. Reheat gently on the stove with a splash of broth to loosen the sauce. For a vegetable boost, add a handful of fresh baby spinach at the end until wilted.
