Description

Experience the warmth of a homemade loaf with this easy Cheddar & Herb Soda Bread. Perfect for busy bakers, this quick bread requires no yeast or long rise times. It features a delightful combination of sharp cheddar cheese and fresh aromatic herbs, resulting in a golden, crusty exterior and a soft, savory interior. Ideal as a companion to soups or served at brunch, this foolproof recipe delivers bakery-quality results in under an hour.

Ingredients

Scale

4 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon baking soda
1 teaspoon salt
2 cups shredded sharp cheddar cheese
1 tablespoon fresh rosemary, finely chopped
1 tablespoon fresh chives, finely chopped
1 ¾ cups buttermilk
1 tablespoon honey

Instructions

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a large bowl, whisk together the flour, baking powder, baking soda, and salt until well combined.
Fold in the shredded cheddar cheese and chopped herbs using a wooden spoon.
Make a well in the center of the dry ingredients and pour in the buttermilk and honey.
Mix gently with your hands or a spoon until just combined, being careful not to overwork the dough.
Turn the dough onto a floured surface, shape it into a round loaf, and place it on the prepared sheet.
Use a sharp knife to score an ‘X’ on top of the loaf.
Bake for 35 minutes, or until the bread sounds hollow when tapped on the bottom.
Let it cool on a wire rack for at least 15 minutes before slicing.

Notes

Store in an airtight container at room temperature for up to 2 days. Refresh by toasting slices. For a smokier profile, replace cheddar with smoked gouda. Handle dough gently to ensure the crumb remains light and tender.
