Ingredients
1 lb large shrimp, peeled and deveined (tails on)
1 cup unsweetened shredded coconut
1/2 cup panko breadcrumbs
1/2 cup all-purpose flour
2 large eggs, lightly beaten
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup mayonnaise
3 tablespoons sweet chili sauce
1 teaspoon lime juice
Vegetable oil for frying
Instructions
Prepare the breading station by setting up three bowls: one with flour, salt, pepper, and garlic powder; one with beaten eggs; and one with the coconut and panko mix.
