Ingredients
6 large yellow onions, thinly sliced
4 tablespoons unsalted butter
2 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon all-purpose flour
6 cups high-quality beef stock
1 teaspoon dried thyme
1 bay leaf
1 French baguette, sliced into 1-inch rounds
2 cups Gruyere cheese, freshly grated
Instructions
Heat butter and olive oil in a large pot over medium heat.
Add the sliced onions and cook, stirring occasionally, for 35–45 minutes until deep golden brown.
Stir in the flour and cook for 1 minute to remove the raw taste.
Gradually pour in the beef stock while stirring constantly.
Add the thyme and bay leaf, bring to a boil, then reduce heat and simmer for 20 minutes.
Toast baguette slices on a baking sheet until golden brown.
Ladle soup into oven-safe bowls, top with toasted bread and a generous handful of Gruyere.
Broil for 3–5 minutes until the cheese is bubbling and golden.
Notes
Keep leftovers in an airtight container in the fridge for up to 3 days. Freeze soup base without the bread and cheese for up to 2 months. If onions start to burn during caramelization, lower the heat and add a tablespoon of water.
