Ingredients
3 ripe bananas, mashed
1/3 cup melted butter
1/2 cup granulated sugar
1 large egg, beaten
1 teaspoon vanilla extract
1 teaspoon baking soda
Pinch of salt
1 1/2 cups all-purpose flour
Instructions
Preheat your oven to 350°F (175°C) and grease your 9×5 inch loaf pan.
In a large bowl, mash the peeled bananas with a fork until smooth but slightly chunky.
Stir in the melted butter, sugar, beaten egg, and vanilla extract until well combined.
Sprinkle the baking soda and salt over the mixture.
Fold in the flour until just incorporated, being careful not to overmix.
Pour the batter into the prepared loaf pan and smooth the top.
Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
Let the bread cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Notes
Store in an airtight container at room temperature for up to 3 days, or freeze for up to 3 months. For best results, use bananas with heavy brown spots. For added texture, fold in 1/2 cup of toasted walnuts.
