Ingredients
1 3/4 cups all-purpose flour
1 tsp baking soda
1/2 tsp baking powder
1 tsp ground cinnamon
1/2 tsp ground nutmeg
1/2 tsp salt
1 cup canned pumpkin puree
1/2 cup vegetable oil
1 cup granulated sugar
2 large eggs
1/4 cup granulated sugar (for swirl)
1 tbsp ground cinnamon (for swirl)
Instructions
Preheat your oven to 350°F (175°C) and grease your loaf pan thoroughly.
In a medium bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
In a large bowl, whisk the pumpkin puree, oil, sugar, and eggs until smooth.
Slowly fold the dry ingredients into the wet ingredients until just combined; do not overmix.
In a small bowl, mix the 1/4 cup sugar and 1 tablespoon cinnamon for the swirl.
Pour half the batter into the loaf pan and sprinkle the cinnamon-sugar mixture evenly over the top.
Pour the remaining batter over the cinnamon layer and use a knife to gently swirl in a zigzag motion.
Bake for 50-60 minutes until a toothpick inserted into the center comes out clean.
Cool for 10 minutes before removing from the pan.
Notes
Store the loaf in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week. Ensure the pumpkin puree is plain and not pumpkin pie filling for the best results.
