Ingredients

Scale

2 cups low-fat cottage cheese
1 medium crisp apple (Gala or Honeycrisp), finely diced
1 teaspoon ground cinnamon
1 tablespoon pure maple syrup
1/4 cup chopped walnuts or pecans
1/4 teaspoon vanilla extract

Instructions

Heat a small skillet over medium heat.
Add the diced apples, a splash of water, and half of the cinnamon to the skillet.
Sauté for 3–5 minutes until the apples are tender but still firm.
Remove the apples from the heat and allow them to cool for a few minutes.
In a medium mixing bowl, stir together the cottage cheese, vanilla extract, and the remaining cinnamon.
Gently fold the cooled apples into the cottage cheese mixture.
Divide into serving bowls or silicone liners and drizzle with maple syrup and top with nuts.

Notes

For a smoother consistency, pulse the cottage cheese in a blender for 5 seconds before combining.
Store in an airtight container in the refrigerator for up to 3 days.
Great for meal prep by portioning into individual containers the night before.
