Ingredients
1 cup quinoa, rinsed thoroughly
2 cups unsweetened almond milk
1 large Honeycrisp or Granny Smith apple, diced
1 teaspoon ground cinnamon
1/2 teaspoon pure vanilla extract
1 tablespoon maple syrup
1 pinch of salt
Instructions
Place the quinoa in a fine-mesh strainer and rinse under cold water for 30 seconds to remove its natural bitter coating.
In a medium saucepan, combine the rinsed quinoa, almond milk, diced apples, cinnamon, and a pinch of salt.
Bring the mixture to a gentle boil over medium-high heat.
Reduce heat to low, cover with a lid, and simmer for 12-15 minutes, or until the liquid is absorbed and quinoa is fluffy.
Remove from heat, stir in the vanilla extract and maple syrup, and let it sit covered for 2 minutes to steam.
Notes
Store leftovers in an airtight container in the refrigerator for up to 4 days; reheat with a splash of milk to restore creaminess. Substitute apples with pears or peaches if preferred. Stir in vanilla protein powder after cooking for an extra boost.
