Ingredients

1 pound boneless, skinless chicken breasts, cut into small pieces
1/2 cup diced onion
1/2 cup diced bell pepper
1 jalapeno pepper, diced
2 cloves garlic, minced
1 packet pork-free taco seasoning
810 corn tortillas
Shredded cheese (Monterey Jack or Cheddar)
diced tomatoes (optional)
shredded lettuce (optional)
diced avocado (optional)
sour cream (optional)
salsa (optional)


Instructions

Dice onion into small, even cubes and sauté in a large skillet with a little oil until translucent
Add diced bell pepper and cook for an additional 2 minutes until tender
Add chicken to the skillet, cook until browned, then add taco seasoning and cook according to package instructions
While the chicken is cooking, prepare your toppings and warm the tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds
