Description

An elegant and sophisticated one-pan meal that balances earthy wild mushrooms with a rich, non-alcoholic grape reduction. This French-inspired dish delivers deep, nuanced flavors in under an hour, making it an ideal choice for a cozy date night or an impressive dinner party. Simple to prepare yet stunning in presentation, this recipe proves you do not need alcohol to achieve a complex, restaurant-quality sauce that perfectly complements tender, golden-brown chicken breasts.

Ingredients

Scale

4 large chicken breasts, skinless and boneless
2 cups wild mushrooms (cremini, shiitake, or oyster), sliced
1 cup non-alcoholic red grape juice
1/2 cup chicken bone broth
1/4 cup fresh basil, chiffonade
2 tablespoons unsalted butter
2 cloves garlic, minced
1 shallot, finely diced
1 teaspoon fresh thyme leaves
Salt and freshly cracked black pepper to taste

Instructions

Season the chicken breasts with salt and pepper.
Heat one tablespoon of butter in a large skillet over medium-high heat.
Cook the chicken for 5-6 minutes per side until golden brown and cooked through, then remove to a warm plate.
In the same skillet, add the remaining butter, mushrooms, shallots, and thyme.
Cook for 5 minutes until mushrooms are browned and tender.
Add the garlic and cook for 1 minute until fragrant.
Pour in the non-alcoholic grape juice and chicken broth, scraping the bottom of the pan to release browned bits.
Simmer for 8-10 minutes until the liquid reduces by half and becomes thick and glossy.
Return the chicken to the skillet to coat in the sauce.
Sprinkle with fresh basil just before serving.

Notes

Store leftovers in an airtight container for up to 3 days. Reheat gently on the stovetop with a splash of broth. If wild mushrooms are unavailable, button mushrooms are an excellent alternative.
