4 ciabatta rolls or crusty sourdough slices
2 large chicken breasts, sliced thin
1/2 cup basil pesto (alcohol-free)
8 oz fresh mozzarella, sliced
1 large tomato, sliced
1 cup fresh baby spinach
2 tbsp olive oil
1/2 tsp garlic powder
Salt and pepper to taste
Instructions
Season thin chicken slices with olive oil, garlic powder, salt, and pepper.
Cook chicken in a skillet over medium-high heat for 3-4 minutes per side until golden brown and cooked through.
Spread a generous tablespoon of basil pesto on the inside of each bread slice.
Layer the cooked chicken on the bottom bun followed by tomato slices and fresh spinach.
Top with fresh mozzarella slices.
Place the open-faced sandwiches in the skillet over low heat and cover with a lid for 2 minutes until cheese melts.
Close the sandwiches and serve warm.
Notes
Store leftover chicken and bread separately to maintain quality; reheat in a toaster oven for the best texture. You can substitute mozzarella with provolone or mild white cheddar if preferred. Choose high-quality crusty bread to support the juicy fillings.
