Ingredients
2 tablespoons olive oil
1 cup yellow onion, diced
1 cup carrots, finely chopped
2 cloves garlic, minced
1 pound cooked chicken breast, shredded
4 cups low-sodium chicken broth
16 ounces potato gnocchi
2 cups fresh baby spinach, chopped
1 cup heavy cream
1/2 teaspoon dried thyme
Salt and black pepper to taste
Instructions
Heat olive oil in a large stockpot over medium heat.
Add diced onions and carrots and sauté for 5–7 minutes until translucent.
Stir in the minced garlic and thyme, cooking for 1 minute.
