1 teaspoon onion powder
1/2 teaspoon paprika
1/2 teaspoon fine sea salt
1/4 teaspoon black pepper
4 large flour tortillas (10-inch size)
4 cups chopped romaine lettuce
1/2 cup grated vegetarian Parmesan-style cheese
1 cup crunchy croutons, lightly crushed
1/2 cup plain Greek yogurt
2 tablespoons mayonnaise
2 tablespoons fresh lemon juice
1 tablespoon olive oil (for dressing)
1 teaspoon Dijon mustard
1 small garlic clove, finely grated
1 tablespoon finely chopped capers
1/4 teaspoon black pepper (for dressing)
1 to 2 tablespoons water (as needed to thin dressing)


Instructions

Pat chicken breasts dry with paper towels and slice in half horizontally to form thinner cutlets
Mix garlic powder, onion powder, paprika, sea salt, and black pepper in a bowl
Sprinkle seasoning on both sides of chicken and press gently to adhere
Heat 1 tablespoon olive oil in a skillet over medium heat
Cook chicken 4-5 minutes per side until golden and fully cooked
Whisk Greek yogurt, mayonnaise, lemon juice, 1 tablespoon olive oil, Dijon mustard, garlic, capers, and black pepper into dressing
Assemble wraps by placing 1 cup lettuce, 2 trimmed chicken cutlets, 1 tbsp croutons, and 1 tbsp Parmesan in each tortilla
Fold tortillas tightly and serve warm or at room temperature
