Ingredients
1 lb lean ground beef
4 medium russet potatoes, peeled and diced into 1/2-inch cubes
1 medium yellow onion, finely diced
2 cloves garlic, minced
1 teaspoon smoked paprika
1 teaspoon dried oregano
1/2 cup beef broth (alcohol-free)
2 cups shredded cheddar cheese
Salt and black pepper to taste
Fresh parsley for garnish
Instructions
Heat a large skillet over medium-high heat and add the ground beef, breaking it apart with a spoon until browned.
Remove the beef from the skillet and set aside, leaving approximately 1 tablespoon of drippings in the pan.
Add the diced potatoes to the skillet in an even layer and cook for 8–10 minutes, stirring occasionally, until golden brown and tender.
Add the diced onions to the potatoes and sauté for about 3 minutes until softened and fragrant.
Stir in the minced garlic, smoked paprika, and oregano, cooking for 1 minute until aromatic.
Pour in the beef broth and return the browned beef to the skillet, simmering for 3–5 minutes until the liquid has mostly evaporated.
Turn off the heat, sprinkle the shredded cheese over the top, and cover the pan for 2 minutes to allow the cheese to melt completely.
Garnish with fresh parsley before serving hot.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet or microwave until warmed through. You can customize the cheese blend by adding Monterey Jack or Pepper Jack for extra flavor.
