2 lbs fresh green beans, trimmed and halved
6 strips turkey bacon, diced
2 tbsp unsalted butter
1 small yellow onion, finely diced
8 oz cremini mushrooms, sliced
3 tbsp all-purpose flour
2 cups vegetable broth
1 cup heavy cream
1.5 cups shredded sharp cheddar cheese
1/2 cup grated parmesan cheese
1.5 cups crispy fried onions
Salt and black pepper to taste


Instructions

Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish.
Blanch the green beans in boiling salted water for 4 minutes until bright green; drain and set aside.
Cook the diced turkey bacon in a large skillet over medium-high heat until crispy; remove with a slotted spoon and set aside.
In the same skillet, melt butter and sauté the onions and mushrooms until softened, about 5 minutes.
Sprinkle flour over the vegetables and stir for 1 minute; gradually whisk in the vegetable broth and heavy cream until thick and glossy.
Remove from heat and stir in 1 cup of cheddar, half the parmesan, and the cooked turkey bacon.
Combine the green beans with the sauce and transfer the mixture to the baking dish.
Top with the remaining cheddar, parmesan, and the fried onions; bake for 20 minutes until bubbling and golden.
