It is remarkably simple to prepare, yet impressive enough to satisfy any craving for comfort food. A fool-proof recipe that guarantees a golden, bubbling finish every single time you cook it.

Ingredients

Scale

4 fresh Atlantic salmon fillets (6 oz each)
2 cups fresh baby spinach, packed
1/2 cup cream cheese, softened
1/4 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
2 cloves garlic, minced
1 tbsp olive oil
1 tsp lemon juice
1/2 tsp dried oregano
Salt and black pepper to taste

Instructions

Preheat your oven to 400°F (200°C) and lightly grease a baking dish.
Heat one teaspoon of olive oil in a skillet over medium heat.
Add the spinach and garlic to the skillet, sautéing for 2 minutes until wilted, then set aside.
In a small bowl, whisk together the cream cheese, mozzarella, Parmesan, lemon juice, salt, pepper, and oregano.
Fold the wilted spinach mixture into the cheese mixture until combined.
Pat the salmon fillets dry and place them in the baking dish.
Spread the cheesy spinach topping evenly over each salmon fillet.
Bake for 12–15 minutes until the salmon flakes easily and the topping is golden and bubbly.

Notes

Store leftovers in an airtight container for up to 2 days; reheat in the oven instead of the microwave to maintain the topping texture. Swap the topping for crispy chicken strips if a protein variation is desired.
