2 cups all-purpose flour
1/2 cup granulated sugar
1 cup cold unsalted butter, cubed
1/2 teaspoon salt
16 oz cream cheese, softened
1/2 cup granulated sugar (for filling)
1 large egg
1 teaspoon vanilla extract
2 cups peeled and finely diced Granny Smith apples
1 teaspoon ground cinnamon
1/2 cup thick caramel sauce


Instructions

Preheat your oven to 350°F (175°C) and line a 9×9 inch square baking pan with parchment paper.
In a large bowl, combine flour, sugar, and salt. Cut in the cold butter until the mixture resembles coarse crumbs.
Press two-thirds of the crumb mixture firmly into the bottom of the prepared pan and bake for 12 minutes.
In a medium bowl, beat the cream cheese and sugar until smooth, then mix in the egg and vanilla.
In a small bowl, toss the diced apples with the ground cinnamon.
Spread the cream cheese filling over the par-baked crust, then scatter the apples evenly on top.
Crumble the remaining crust mixture over the apples and drizzle with half of the caramel sauce.
Bake for 25–28 minutes until the center is set.
Cool completely, then drizzle with the remaining caramel sauce before cutting into 16 squares.

Notes

Store in an airtight container in the refrigerator for up to 5 days. For the best flavor, bring to room temperature before serving. Ensure the cream cheese is fully softened to avoid lumps in your filling.
