Ingredients
1 pre-baked 9-inch pie crust
2 cups butternut squash, peeled and cubed into 1/2 inch pieces
2 large yellow onions, thinly sliced
4 ounces creamy goat cheese, crumbled
4 large eggs
1 cup heavy cream
1/2 cup whole milk
2 tablespoons olive oil
1/2 teaspoon fresh thyme leaves
Salt and black pepper to taste
1/2 cup diced smoked chicken (optional)
Instructions
Heat olive oil in a skillet over medium-low heat and cook onions with a pinch of salt for 20-25 minutes until deep golden brown.
Roast cubed squash on a baking sheet at 400°F for 15-20 minutes until fork-tender.
Whisk eggs, cream, milk, thyme, salt, and pepper in a medium bowl until combined.
Spread caramelized onions, roasted squash, goat cheese, and optional smoked chicken into the bottom of the pre-baked crust.
Pour the custard mixture over the filling.
Bake at 375°F for 30-35 minutes until the center is set and the top is lightly golden.
