This smoky and cheesy BBQ Chicken Pizza is a quick weeknight treat. Loaded with shredded chicken, mozzarella, cheddar, and sweet-savory BBQ sauce on a crispy crust, it’s perfect for family dinners or game-day snacks.
Ingredients
1 large 12-inch pizza crust, pre-baked, or 1 pound fresh pizza dough
1/2 cup halal-certified BBQ sauce, divided
2 cups cooked shredded chicken breast or chicken thighs
1 1/2 cups shredded mozzarella cheese
1/2 cup shredded cheddar cheese
1/3 cup thinly sliced red onion
1/3 cup corn kernels (fresh, frozen and thawed, or canned and drained)
1 tablespoon olive oil
1/2 teaspoon garlic powder
1/4 teaspoon smoked paprika
2 tablespoons chopped fresh cilantro or parsley
Optional: 1/4 teaspoon crushed red pepper flakes
Instructions
Preheat the oven. Set your oven to 475°F. Place a pizza stone or baking sheet inside while the oven heats so the crust gets crisp on the bottom.
Prepare the crust. If using fresh dough, lightly flour your surface, stretch or roll it into a 12-inch circle, then brush the edge with olive oil. Bake it for 5 minutes until just set. If using a pre-baked crust, place it directly on a sheet of parchment or a pizza peel.
Season the chicken. In a mixing bowl, combine the shredded chicken, 1/4 cup BBQ sauce, garlic powder, and smoked paprika. Stir until the chicken looks evenly coated and slightly glossy.
Build the pizza. Spread the remaining 1/4 cup BBQ sauce over the crust, leaving a 1/2-inch border around the edge. Sprinkle on 1 cup mozzarella, then add the saucy chicken, red onion, and corn.
Add cheese and toppings. Sprinkle the remaining 1/2 cup mozzarella and the cheddar cheese over the chicken and toppings. If desired, sprinkle optional red pepper flakes for heat.
Bake the pizza. Place your prepared crust on the baking sheet or pizza stone. Bake for 12 minutes or until the crust is golden and the cheese is bubbly and golden. Remove and let cool slightly.
Garnish and serve. Sprinkle chopped fresh cilantro or parsley over the hot pizza. Serve immediately and enjoy your smoky, cheesy masterpiece!
