Ingredients
2 1/4 cups all-purpose flour
1 teaspoon baking soda
2 teaspoons ground ginger
1 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1/4 teaspoon salt
3/4 cup unsalted butter, softened
1/2 cup granulated sugar
1/2 cup packed brown sugar
1/4 cup molasses
1 large egg
1 teaspoon vanilla extract
1 cup white chocolate chips
Instructions
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a medium bowl, whisk together flour, baking soda, ginger, cinnamon, cloves, and salt until well combined.
In a large bowl, beat the butter, granulated sugar, and brown sugar until light and fluffy, about 3 minutes.
Mix in the molasses, egg, and vanilla extract until smooth.
Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined.
Scoop rounded tablespoons of dough onto the baking sheet.
Bake for 10 minutes until edges are set but centers remain soft.
Once cooled, melt your white chocolate in 20-second intervals in the microwave, then drizzle decoratively over the cookies.
Notes
Store in an airtight container at room temperature for up to 5 days to maintain maximum softness. Melt white chocolate in short 20-second bursts to prevent burning.
