1.5 cups Arborio rice
4 cups warm vegetable broth
1 cup pumpkin puree
4 oz creamy goat cheese
1 small yellow onion, finely diced
2 cloves garlic, minced
2 tbsp olive oil
1/2 cup grated Parmesan cheese
1 tsp dried sage
1/4 tsp nutmeg
Salt and pepper to taste


Instructions

Preheat your oven to 375°F (190°C).
Heat olive oil in an oven-safe Dutch oven over medium heat.
Sauté the onion for 5 minutes until translucent, then add garlic and cook for 1 minute.
Add the Arborio rice and toast for 2-3 minutes until edges are translucent.
Pour in the warm vegetable broth, pumpkin puree, nutmeg, and sage, whisking until the pumpkin is fully incorporated.
Cover with a tight-fitting lid and bake for 30-35 minutes until rice is tender.
Remove from the oven and stir in the goat cheese and Parmesan until creamy.
Season with salt and pepper and serve warm.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. For added protein, top the finished risotto with crispy seasoned chicken strips. If the risotto seems too thick upon reheating, add a small splash of warm broth.
