Ingredients
8 oz block of high-quality feta cheese
2 pints cherry or grape tomatoes
1/2 cup extra virgin olive oil
4 cloves garlic, thinly sliced
1/2 tsp crushed red pepper flakes
12 oz pasta of choice
1 cup fresh basil leaves, torn
1/2 cup crispy turkey bacon bits
Sea salt and black pepper to taste
Instructions
Preheat your oven to 400°F (200°C).
Place the block of feta in the center of a baking dish.
Scatter tomatoes around the feta, then drizzle with olive oil.
Sprinkle with garlic, red pepper flakes, salt, and pepper; toss the tomatoes to coat.
Bake for 30–35 minutes until tomatoes burst and feta is soft and golden.
Boil pasta in salted water until al dente, reserving 1/2 cup of pasta water.
Smash the feta and tomatoes together with a wooden spoon to create a creamy sauce.
Stir in the cooked pasta, turkey bacon bits, and fresh basil.
Add reserved pasta water if needed to adjust the sauce consistency and serve.
Notes
