Ingredients
3 large apples (Honeycrisp or Granny Smith), peeled and diced
1/4 cup coconut sugar or brown sugar
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1 tablespoon fresh lemon juice
8 sheets round rice paper
1 tablespoon melted coconut oil
Optional: 1/4 cup chopped walnuts or pecans
Instructions
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
Add diced apples, sugar, cinnamon, nutmeg, and lemon juice to a skillet over medium heat.
Sauté for 5–7 minutes until apples are soft, then remove from heat and stir in optional nuts if using.
Allow the mixture to cool for 5 minutes.
Dip one sheet of rice paper into warm water for 5–10 seconds until flexible, then lay flat on a cutting board.
Place a spoonful of apple mixture in the center, fold in the bottom and sides, then roll tightly into a cylinder.
Repeat for all 8 sheets.
Arrange rolls on the prepared baking sheet and brush lightly with melted coconut oil.
Bake for 12–15 minutes until golden and crispy.
Notes
Keep leftovers in an airtight container in the fridge for up to 2 days. For the best texture, reheat in an air fryer or oven to regain crispiness. Ensure the apple filling is not too hot before rolling to prevent the rice paper from tearing.
