2 large fresh lotus roots, peeled and sliced into 1/4 inch rounds
300g ground beef

1 tablespoon fresh ginger, grated
1 tablespoon soy sauce
1 teaspoon sesame oil
1/2 teaspoon white pepper
1 tablespoon cornstarch
Cooking oil for pan-frying
Instructions
Peel the lotus root and slice into uniform 1/4 inch rounds.
Blanch the slices in boiling water for 3 minutes to soften, then drain and pat dry.
In a mixing bowl, combine the ground beef, green onion, ginger, soy sauce, sesame oil, white pepper, and cornstarch, mixing until sticky.
Place a small spoonful of the beef mixture between two lotus root slices and press together to form a sandwich.
Wipe away any excess meat from the sides.
Heat cooking oil in a large skillet over medium heat.
Carefully place the stuffed lotus rounds into the pan.
Fry for 5-6 minutes per side until the beef is fully cooked and the lotus is golden brown and crispy.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheat in an air fryer to maintain the crispy texture.
You can substitute the ground beef with ground chicken breast if preferred.
