Ingredients
2 cups all-purpose flour
1 ½ cups granulated sugar
1 tsp baking powder
1 tsp baking soda
1 tsp ground cinnamon
½ tsp ground nutmeg
½ tsp ground cloves
½ tsp salt
3 cups peeled and diced Gala or Honeycrisp apples
1 cup vegetable oil
2 large eggs
1 tsp vanilla extract
Instructions
Preheat your oven to 350°F (175°C) and grease your baking pan lightly with non-stick spray.
In a large bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, nutmeg, cloves, and salt until well combined.
Add the oil, eggs, and vanilla to the dry mixture and stir with a spatula until just combined.
Gently fold the diced apples into the batter until evenly distributed.
Spread the batter into your prepared pan.
Bake for 40–45 minutes, or until a toothpick inserted into the center comes out clean.
Let the cake cool in the pan for 10 minutes before slicing and serving.
Notes
Keep the cake in an airtight container at room temperature for up to 3 days or in the fridge for 5 days. For the best texture, use crisp, tart-sweet apples like Honeycrisp or Granny Smith. For an extra-moist cake, you can substitute half of the vegetable oil with unsweetened applesauce.
