2 cups all-purpose flour
1/2 cup granulated sugar
3/4 cup cold unsalted butter, cubed
16 oz cream cheese, softened
1/2 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
3 large Granny Smith apples, peeled and thinly sliced
1/4 cup brown sugar
1 teaspoon ground cinnamon
2 tablespoons apple cider (non-alcoholic)


Instructions

Preheat your oven to 350°F (175°C) and line a 9×13 inch baking pan with parchment paper.
In a large bowl, mix 2 cups flour and 1/2 cup sugar; cut in the cold butter until the mixture resembles coarse crumbs.
Press two-thirds of this mixture into the bottom of the pan and bake for 10 minutes.
In a medium bowl, toss sliced apples with brown sugar, cinnamon, and apple cider.
In a separate bowl, beat cream cheese, 1/2 cup sugar, egg, and vanilla until smooth.
Spread the cream cheese mixture over the partially baked crust.
Layer the apple mixture evenly over the cheesecake layer.
Sprinkle the remaining crust mixture over the top.
Bake for 35–40 minutes until golden brown and the center is set.
Cool completely on a wire rack, then refrigerate for at least 2 hours before slicing.

Notes

Store leftovers in an airtight container in the refrigerator for up to 4 days. You can substitute Granny Smith apples with Honeycrisp or other firm, tart baking apples.
