2 cups all-purpose flour
1 tbsp granulated sugar
1/2 tsp salt
3/4 cup cold butter, cubed
1/4 cup ice water
4 large Honeycrisp apples, thinly sliced
1/4 cup brown sugar
1 tsp ground cinnamon
1/4 tsp ground nutmeg
1 tbsp lemon juice
1 egg (for egg wash)


Instructions

In a large bowl, whisk together flour, sugar, and salt.
Cut in the cold butter until the mixture resembles coarse crumbs.
Gradually add ice water, stirring until a dough forms.
Wrap the dough and chill for 10 minutes.
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a separate bowl, toss apple slices with brown sugar, cinnamon, nutmeg, and lemon juice until well coated.
Roll the dough out onto a floured surface into a rough 12-inch circle.
Transfer the dough to your prepared baking sheet.
Arrange the apple slices in the center of the dough, leaving a 2-inch border.
Fold the edges of the dough over the apples, pleating as you go.
Brush the crust with a beaten egg for a golden finish.
Bake for 30–35 minutes until the pastry is golden brown and the apples are tender.

Notes

Keep leftovers in an airtight container at room temperature for up to 2 days or refrigerate for up to 5 days. Reheat in the oven to crisp the crust back up. Sprinkle a teaspoon of almond flour or crushed graham crackers on the dough before adding apples to absorb excess juices and prevent a soggy bottom.
