Ingredients

Scale

2 cups all-purpose flour
1 cup granulated sugar
1/2 cup unsalted butter, softened
2 large apples, peeled and thinly sliced
1 cup Greek yogurt
2 large eggs
1 tsp vanilla extract
1 tbsp ground cinnamon
2 tsp baking powder
1/2 tsp salt

Instructions

Preheat your oven to 350°F (175°C) and grease your 9-inch square baking dish.
In a large bowl, whisk together flour, sugar, baking powder, and salt.
Cut the softened butter into the dry mixture until it resembles coarse crumbs.
Scoop out 1/2 cup of this dry crumb mixture and set aside.
Add yogurt, eggs, and vanilla to the remaining mixture and stir until just combined.
Spread the batter uniformly into your prepared baking dish.
Arrange the apple slices on top in an even layer.
Sprinkle the reserved crumb mixture over the top of the apples.
Bake for 45 minutes or until a toothpick inserted into the center comes out clean.
Let cool for 10 minutes before serving.

Notes

Store leftovers in an airtight container at room temperature for up to 3 days or refrigerated for up to a week. For a nuttier texture, add 1/4 cup chopped walnuts to the topping. You can add 1/4 teaspoon ground nutmeg or ginger for extra spice.
