Ingredients
2 cups all-purpose flour
1/2 cup granulated sugar
1/2 cup light brown sugar, packed
1 tablespoon ground cinnamon
2 teaspoons baking powder
1/2 teaspoon salt
2 large eggs, room temperature
1/2 cup unsalted butter, melted
1/2 cup whole milk
1 teaspoon vanilla extract
2 cups apples, peeled and finely diced
Instructions
Preheat your oven to 375°F (190°C) and line your muffin tin with paper liners or grease them lightly.
In a large bowl, whisk together the flour, sugars, cinnamon, baking powder, and salt.
In a separate bowl, whisk together the eggs, melted butter, milk, and vanilla extract until smooth.
Pour the wet ingredients into the dry ingredients and fold gently with a spatula just until the flour streaks disappear.
Gently fold in the diced apples.
Scoop the batter into the prepared muffin tin, filling each cup about 3/4 full.
Bake for 18–22 minutes or until a toothpick inserted into the center comes out clean.
Let the muffins cool in the tin for 5 minutes before transferring to a wire rack to cool completely.

Store in an airtight container at room temperature for up to 3 days, or freeze for up to 2 months. Use Granny Smith or Honeycrisp apples for the best texture and flavor.
