Description

Experience the cozy, nostalgic flavors of a classic orchard donut in these easy-to-make, cake-like muffins. Perfectly spiced with cinnamon and nutmeg, these treats are finished with a buttery cinnamon-sugar coating. Ideal for busy autumn mornings or festive brunches, they capture the essence of a crisp harvest day without the hassle of deep frying. The high-quality apple cider infuses a rich, seasonal depth that makes every bite feel like a warm, handheld hug.

Ingredients

Scale

1/2 cup unsalted butter, softened
1/2 cup granulated sugar
1/4 cup light brown sugar, packed
1 large egg
1/2 cup high-quality apple cider
1/4 cup plain Greek yogurt
1 1/2 cups all-purpose flour
1 1/2 tsp baking powder
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
1/4 cup unsalted butter, melted (for topping)
1/3 cup cinnamon-sugar mixture (for topping)

Instructions

Preheat oven to 375°F (190°C) and grease a standard 12-cup muffin tin.
In a large bowl, cream the butter, granulated sugar, and brown sugar until light and fluffy.
Beat in the egg, then stir in the apple cider and Greek yogurt until smooth.
In a separate small bowl, whisk together the flour, baking powder, cinnamon, and nutmeg.
Gently fold the dry ingredients into the wet ingredients just until combined; do not overmix.
Scoop the batter evenly into the 12 muffin cups.
Bake for 16-18 minutes or until a toothpick inserted in the center comes out clean.
Cool for 5 minutes in the pan before removing.
While still warm, brush each muffin with melted butter and roll in the cinnamon-sugar mix.

Notes

Store in an airtight container at room temperature for up to 3 days. These can also be frozen for up to a month. For the best flavor, use high-quality, unfiltered apple cider.
