Ingredients
1/2 cup unsalted butter, softened
1/2 cup granulated sugar
1/4 cup light brown sugar, packed
1 large egg
1/2 cup high-quality apple cider
1/4 cup plain Greek yogurt
1 1/2 cups all-purpose flour
1 1/2 tsp baking powder
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
1/4 cup unsalted butter, melted (for topping)
1/3 cup cinnamon-sugar mixture (for topping)
Instructions
Preheat oven to 375°F (190°C) and grease a standard 12-cup muffin tin.
In a large bowl, cream the butter, granulated sugar, and brown sugar until light and fluffy.
Beat in the egg, then stir in the apple cider and Greek yogurt until smooth.
In a separate small bowl, whisk together the flour, baking powder, cinnamon, and nutmeg.
