1.5 cups graham cracker crumbs
1/4 cup granulated sugar
6 tablespoons unsalted butter, melted
1 cup apple cider (reduced to 1/4 cup)
24 oz cream cheese, softened
3/4 cup granulated sugar
3 large eggs, room temperature
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon


Instructions

Reduce the apple cider in a small saucepan over medium heat until it reaches 1/4 cup volume and let it cool.
Preheat oven to 350°F (175°C).
Combine graham cracker crumbs, sugar, and melted butter; press into a 9-inch springform pan.
Bake the crust for 8 minutes and set aside to cool.
Lower oven temperature to 325°F (165°C).
Beat cream cheese and sugar in a large bowl until smooth.
Add eggs one at a time, then mix in the reduced apple cider syrup, vanilla, and cinnamon.
Pour the batter over the crust.
Bake for 55-65 minutes until the center is set but slightly jiggly.
Turn off the oven and leave the door slightly cracked for one hour to cool slowly.
Chill in the refrigerator for at least 4 hours before serving.

Keep refrigerated in an airtight container for up to 5 days.
For a nuttier base, substitute half of the graham crackers with finely crushed pecans.
