Ingredients

Scale

3 large sweet potatoes, peeled and cubed
2 Granny Smith apples, peeled and chopped
1 yellow onion, finely diced
4 cups vegetable broth
1 cup sharp cheddar cheese, freshly shredded
1/2 cup heavy cream
2 tablespoons olive oil
1 teaspoon ground cinnamon
Salt and black pepper to taste
Optional: Crispy turkey bacon crumbles for topping

Instructions

Heat olive oil in a large stockpot or Dutch oven over medium heat.
Add the diced onions and sauté for 3-5 minutes until translucent and fragrant.
Add the cubed sweet potatoes and chopped apples to the pot.
Pour in the vegetable broth until the ingredients are submerged.
Bring to a boil, then reduce heat and simmer for 20 minutes until the potatoes are fork-tender.
Remove from heat and use an immersion blender to process the soup until completely smooth.
Stir in the shredded cheddar cheese and heavy cream.
Return to low heat for 2 minutes, stirring until the cheese is melted and the soup is glossy.
Season with cinnamon, salt, and pepper to taste before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 4 days or freeze for up to 3 months. For a thinner consistency, add an extra splash of vegetable broth during blending. Swap heavy cream for coconut milk if you prefer a dairy-free base. Top with crispy turkey bacon crumbles for added texture and smoky flavor.
