Description
A lighter take on the pizza shop 12in chicken parm sub with fewer calories, crisp texture, and cheesy comfort. Easy to make at home with baked chicken and simple ingredients.
Ingredients
2 boneless skinless chicken breasts, sliced lengthwise
1/2 cup whole wheat breadcrumbs
1 egg, beaten
1/2 cup marinara sauce
1/2 cup part-skim shredded mozzarella cheese
2 whole wheat hoagie rolls (6 inches each)
1/2 tsp garlic powder
1/4 tsp salt
Olive oil spray
Instructions
1. Preheat oven to 400°F. Line a baking sheet with parchment.
2. Dip chicken slices into egg, then breadcrumbs seasoned with garlic powder and salt.
3. Place on baking sheet. Spray with olive oil. Bake for 20–25 minutes until golden and cooked through.
4. Warm marinara sauce in a saucepan.
5. Toast hoagie rolls, then layer with chicken, sauce, and cheese.
6. Return to oven for 5 minutes or until cheese melts.
7. Serve immediately with a light salad or veggie sticks.
Notes
Use an air fryer for even crispier chicken.
Add red pepper flakes for spice.
Swap rolls with low-carb bread to reduce total carbs.
