Ingredients
2 boneless skinless chicken breasts
2 tbsp olive oil
1 tsp garlic (minced)
1/2 tsp red pepper flakes
1/2 cup sun-dried tomatoes
1 cup chicken broth
1 cup heavy cream
3/4 cup grated Parmesan
8 oz pasta (penne or fettuccine)
Salt and black pepper to taste
Fresh basil (optional)
Instructions
1. Season and sear the chicken until golden brown; remove from skillet.
2. In the same pan, sauté garlic and red pepper flakes.
3. Add sun-dried tomatoes and deglaze with chicken broth.
4. Pour in cream, simmer gently.
5. Stir in Parmesan until smooth.
6. Return sliced chicken to the sauce.
7. Add cooked pasta and toss to coat.
8. Serve with basil and more Parmesan.
Notes
Substitute cream with half-and-half if desired.
Use gluten-free pasta if needed.
Reheat with a splash of broth or milk for best texture.
